the marinated mushroom


I love mushrooms all sorts of ways, but these marinated mushrooms are a kind of melt-in-the-mouth goodness that is perfect for a savoury treat. They keep beautifully in the fridge and are great at parties, or to zing up a salad or open face sandwich.

Marinated Mushrooms

1/3 cup red wine vinegar
1/3 cup olive oil
1 small onion thinly sliced
1 tsp salt
2 tblsp parsley and/or oregano
1 tsp mustard
1 tblsp brown sugar (sometimes i substitute honey)
2 cloves garlic
1 pound small fresh button mushrooms

Throw everything in the pot. (I love recipes that start like this!) Bring to the boil.
Reduce heat then stir in mushrooms. Simmer for 10-12 minutes.
Cool then transfer to the fridge in airtight container.
Serve cold with a toothpick. 

This recipe has been knocking around my kitchen for awhile and unfortunately it's original source is lost. Thank you though, whoever came up with the idea of marinating mushrooms. So good!
